Oatmeal cookies





Ingridients:
  • 1 cup (226 grams) unsalted butter (room temperature)

  • 1 cup brown sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1 1/2 cups all purpose flour

  • 2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 3 cups (260 grams) rolled oats

  • 1/2 cup chocolate chips

  • 1/2 cup walnuts 

Preheat oven to 350 degrees F (177 degrees C) with oven rack
in the center of the oven. Line baking sheets with parchment paper or use non stick oil . 


1. Beat the butter and sugar until creamy and smooth.





2. Add the eggs, 1 at a time, beating after each addition


3. Stir in the vanilla extract



4. Add flour, salt and backing powder.

Mix well until incorporated.


5. Stir in the rolled oats, nuts, chocolate chips and cinnamon


Mix well.


6. Place cookies on sheets using a tablespoon



7. Flatten them slightly


8. Bake the cookies for about 15-18 minutes

or until golden brown around the edges but still a little soft in the centers.


After few minutes removing cookies  from the oven,

transfer them to a wire rack to finish cooling

P.S.  Makes about 30-35 medium cookies. You can surely keep these cookies at room temperature for several days.
